When the Farmer's Markets come back this summer, look for "Fortex" beans. They are amazing! One of our local growers had 3 types of green beans, but the Fortex were by far the yummiest. I got some seeds to try growing them too.
In a pinch I use frozen beans. They can work if you rinse them, let them thaw, then let them dry (or dry them in a spinner or with a clean towel).
