Welcome to the group!
I do Fast-5 primarily to heal my gut, and it has worked extremely well. My basic problem was celiac, but that was undiagnosed for 40+ years, and it left me with a rather damaged digestive tract. My take is that Fast-5 gives the system time to do "do housecleaning" while it's empty.
As you say, it's a lot easier to find "problem foods" if you only eat once a day. But also, foods that I used to have problems with, stopped being problematic. I can digest pretty much anything these days (except wheat, of course).
The other thing that helped for digestion is konjac. I take 1/4 tsp. of it with meals. It is known to help people who have problems digesting starch, but I think it works for most foods. Basically it feeds the good bacteria in the lower gut, and also slows down stomach emptying so there is more time for digestive juices to work. Some people get gas from it when they first take it though, so it might take some getting used to.

Let me first say I decided to try Fast 5 for a few reasons:
1) I have seasonal allergies that affect what foods I can eat, even causing me to react to the food. The biggest being trees, which are completely pollinating right now. For the last month, since they woke up, my stomach as been funny (gas, indigestion, nausea, ect). If it gets to upset I simply fast and give it time to rest. I figured with all the problems that I was having it may help my stomach calm down.
2) Since I wouldn't be eating as often I would have an easier time rotating my food, so I wouldn't eat the same thing over and over again. Again letting my body rest between the various families of veggies, fruit, ect. It also may give me a better idea of what I'm actually having a problem with.
2) I'm trying to loose weight, and although I eat mostly healthy I do like treats. I figured this eating plan would help give me some leeway, because in the end some days I will be eating a little more calories sometimes a little less. Thinking long term use of the plan anyway. I realize not complete leeway :) but a little more then eating 3 meals a day.
So anyway I am 1 weeks in. It has indeed helped my stomach. I haven't felt as sick, except when I ate jumk. I've also been able to space out the types of fruit/veggies I eat. I also amazingly lost 1.5 lbs even though I haven't necessarily been eating the best. It may be water weight but I don't think so since my clothes seem to fit a little easier.
I've had some days were I was extremely hungry and ended up eating something early. There is a few reasons that may have caused this. One I was eating candy, or cookies, or burger king. All horrible things, and it may have threw my stomach off even more. 2 I think I would do best with my window from 3-8. This is kind of my natural window. Typically I eat lunch late around 3 and my dinner is then eaten around 8. When I tried to move it later I either ended up binging on candy, or I would ate close to bed toss and turn all night or have weird dreams or both.
So today I start week 2. With a window of 3-8, so we shall see how well I respond this week.
