One nice big meal though like rice meat and veggies and one dessert along with a healthy beverage.I'm also taking a daily vitamin (centrum) Just wondering if there's a problem with me not eating enough? Or is that enough? What are the draw backs with not eating enough? Or to much, heath wise. I love the way I feel and look though. Thank you.

I guess it depends upon whether or not the "Mama" is starting to cool. I feel the pinch test of belly fat is more consistent than the up and down readings on a scale which seem to vary so much with water content in the body. We've heard from several people puzzled by their up and down journey on the scales, enough so, I would rather use how tight the pants fit as a measure.
I've often used one meal a day, getting a fasting period of 23 hours, but realize that a 19-20 hour low insulin fasting period is probably sufficient. The more I study, I see that low insulin levels of fasting can also be achieved if eating High Fat/Low Carb a la Gary Taubes, Barry Groves.

After reading so much from the 6 meals a day camp, I see consensus from them with having 2 1/2 or 3 hours between meals. Thus lately, I have often broken fast with eggs with cheese or fatty meats, then if still hungry might have a second meal of fatty meat about four hours later before restarting fast. Green vegetables are eaten every other day or so, desserts very rarely more as a special treat instead of a daily habit, no grains or other starches which turn into sugar. I'm not afraid of dairy so eat cheese and sour cream on pork rinds is often the second meal for me if I feel more hunger during the 4 or 5 hours of potential eating before restarting to a fasting state. I find the two meals separated by about 4 hours a somewhat more accurate method of judging a proper quantity for each meal and a day's total consumption.
Don't be afraid to do your own experimentation as you can change up quickly if you don't like the results of your belly fat pinch test. In short, don't be anal about nitpicking "rules" or even your own rules. The only rule to set in stone is to try to get around 20 straight fasting hours per day.
The biggest health change I have seen was the totally non-congested breathing by eating No grain. The fasting makes me feel good and I can have plenty of whole ice cream when you are occasionally in the mood for dessert, without gaining bodyfat from it or Thanksgiving time was a good time to "cheat" a bit on the No-grain by eating Pumpkin pie with the wheat from crust not being a "biggie" to adversely affect me.
