Welcome to a new way of thinking, Sandi!
If you want to consume coconut oil and are new to that, as well, you want to start out slowly: suggested 1 tsp three times/day.
i still do not like CO, tho i've been consuming it for over a year.
you want to make sure you get the Virgin CO (there is no such thing as "extra" virgin CO); it makes sure high temps were not used in the processing. The more "pure" you can buy/afford, the better off you'll be: look for un-refined, un-bleached, un-deodorized.
Now, as to how "I" take it: melted in whatever I'm drinking: my raw egg drink, my hot bone broth.
For someone starting out, according to Eat Fat Lose Fat (Sally Fallon, Mary Enig), dissolve it in a cup of hot water 15-20 minutes before eating; it'll boost energy and curb hunger, helping you to not overeat.
