Tamara, one possible explanation is moderately elevated blood glucose resulting from the consumption of a large carbohydrate load. Carb metabolism is complex and the assimilation of carbs can be delayed by other foods consumed at the same time. So, a late meal with "some" carbs might not produce the same effect.
