Yeah, hunger is mostly a hormone-induced illusion. Your body has an entire system to make you feel hungry so you'll eat. You have more nerves dedicated to your gut than to your brain (really).
But it doesn't turn on when you actually RUN OUT of glycogen or fats in your blood. No way! It's smarter than that. It turns on when you are accustomed to eating ... like a dog that knows it is time for dinner even though it already ate some potato chips from behind the couch.
Anyway, scientists are just now beginning to discover how it all works. But a fair number of chemicals are involved: it's not "all in your head". The grouchiness/etc. though aren't actually your body running out of fuel generally: it's your body producing cortisol, which makes you feel grouchy and hungry. Exercise actually helps fight that, and lemon-juice-water works for me.

I find that I'll feel hunger at a certain time during the day. I just
increase my water intake and keep busy. It might come back and bug me a
couple of times, but then it will go away for several hours. Then it comes
back and we go thru the same cycle again.
Fasting can be such a mental game, eh?
