You might want to increase your carbs a little. Your body DOES need glucose ...
yes it can use ketones instead, but not everyone can adjust to using
those and most people feel pretty bad while the body switches over (this
from observing several low-carb folks).
Blood glucose is just that: blood glucose. If you don't eat carbs, your body
has to use it's limited store of glucose, or manufacture it from protein.
If you are on a very low carb diet for a long time, your body gets good
at manufacturing it, but your's probably isn't at this point. So it makes
perfect sense to me that your blood glucose would be low.
But also, it's difficult when you change two variables at once. Doing Fast-5 AND
drastically changing your diet ... it's giving your body two things to deal with
and also making it harder to figure out what is the cause. You can use "slow"
carbs though, or high-fiber carbs.
Vinegar does in fact affect blood sugar. Weirdly so, since it doesn't
actually contain much, if any, sugar. Apparently acids are some kind
of hormonal signal to the body, and taking some before a meal lowers
the blood sugar "spike" after the meal. And I know it makes me less
hungry if I drink lemon juice when I'm fasting. But I don't get a crash
after. Of course, I have plenty of stored glycogen, I imagine.
But probably you have stored glycogen too, or the vinegar
couldn't trigger it's release? Maybe your body isn't good
at releasing stored glycogen? Sometimes doing exercise
will help with that ... lifting weights, for instance, can raise
your blood sugar temporarily! Caffeine does that too, IIRC.
The other thing that stands out for me is that you are eating
more cream. I did that when I went GF, probably out of self-pity
as much as anything. And it triggered all kinds of cortisol-type
reactions in me (and migraines, which are likely cortisol-related
too). I'm not sure why this is: cream is a worse offender than
milk, but it has LESS casein. I'm thinking it might have to do
with cow hormones (all milk is full of cow hormones,
grass-fed or otherwise). You could try using coconut milk
for a couple of days instead, and see how that works.
