Hey Sandra, that's another great idea! I think I will do a combination of the two -- cook a batch of "heat and eat" tacos (both me and my son love them) and prep a few other things.
Having dinner "done" will give me more time to read for my classes the following day. And it will keep me focused on studying for the bar exam each day when that starts in May.
