Hiya Karen,
It took me a long time to wean myself from carbs and hunger. I used to beat myself up royally until I read something about addiction. I started slowly moving to a LC diet last June and I think it wasn't until the Fall that I actually got past craving bread, etc. Alcohol was the most difficult for me to give up and I discovered that was more related to social discomfort than it was liking the taste or wanting a buzz.
I think eating a complete meal and then not snacking was key for me too. Are you doing that? It trains your brain I think. So far I've been able to move my eating window to 2PM and am amazed that I'm not hungry. I'm leaving more and more food on my plate too. Seems there's disconnect between portions I serve and what I actually want. I do notice that I've eaten my second meal within my eating window when I really didn't want it for fear that I'd be hungry after my window closed. Some time I'll have to get up the courage to see what happens if I don't eat when I'm not hungry. Also I'm on full rest and not lifting weights and chasing after kids like you. That's got to be a factor now that I really think about it.
Hang in there. You WILL figure this out and so will I!
