The Metformin may very well be the cause of your weight gain. Doesn't sound like you're overeating to a very large degree. But I will say that you're eating all of the things that cause me to gain weight: peanut butter, grains (whether whole or refined), granola bars, wine, yogurt, more granola. You're living on a diet of nonstop sugar. Most people think that grains are "good" or "wholesome". They're not. They are on this planet to feed the birds. Cows are usually raised on grass and then toward the end, before they go to market, they're given grains for the express purpose of fattening them up. Another item is that a bread or pasta label that says "Whole Grains" cannot be whole grains. A whole grain contains the outer hull and germ, intact, and in one piece. I would strongly ask you to try to give up any grains at least until your weight is down to where you want it to be.
