Yeah, I go in phases. This is my konjac phase. Give me a month or four

I could never do high fat because (in the past) I couldn't digest it.
I do eat more of it now, like, we had some nice fried chicken for
lunch. But I decided the main thing about fat is just that it doesn't
stimulate insulin production. When you eat carbs, the extra carbs turn
into fat anyway, so eating carbs and eating fat are about the same
thing in terms of energy reserves.

Except that fat doesn't turn into glycogen or glucose, so it keeps
your blood sugar low. That is mainly a problem though, I think, if
one's glucose mechanism is messed up. The Japanese eat a very high
carb diet, and do ok with it.

Hence the konjac experiment. It makes the carbs digest slowly, hence
less effect on blood sugar. It's part of my "eat like a Japanese"
experiment. I'm not counting carbs, fat, or protein: just eating foods
that your typical Japanese person would eat (unenriched rice, seafood,
fried food, not much beef, with plenty of ginger and sauces).
