[fast5] Eating window differences?

I was just wondering what the difference between having a 12-5pm window (or anywhere set in the afternoon) vs.5-10pm? Do we HAVE to wait all day to eat? Why is it that Dr.Herring created this plan to initiate eating at night? If I choose to eat in a 12-5pm window, would I be sacrificing the fat burning affect that this plan offers by fasting 19 hours (even if I still only eat within 5 consecutive hours)? I got on the scale this morning, and it reads 158, 8 pounds more than I normally weigh! What causes this? I love this way of life, but the weight gain that always happens to me everytime I do this is driving me CRAZY!! Thank you all for any input.
