OK!

EASY chicken soup

1. Get a package of chicken thighs, necks, or wings. Lots of skin.
Cook's magazine experimented: it's the skin that makes chicken soup
good. You can add bones etc. too, if you want (save them in the
freezer til you are making soup).

2. Cook the chicken in some water. Add some garlic cloves or
granulated garlic, chopped celery or celery seeds, poultry seasoning,
salt.

3. When the chicken is done, take it out. You can debone it to serve
it, or serve the chicken pieces, depending what your audience likes.
Strain the broth.

4. Add some noodles if you want (I use Schar GF mini-noodles) or rice.
Cook til done.

5. Serve the soup with the chicken in it. If you want to get fancier,
you can add some vegies or drop in some dumplings. Or if you want
Vietnamese style, chop some vegies and other stuff really fine
(greens, onions, tofu, meat), put them in the bottom of a bowl, and
pour the hot broth over them.


If you want egg-drop soup, go back to step 3. Get the broth good and
hot (slightly boiling), then gently pour in some beaten eggs while
stirring.
