Yeah, it is a little weird, which is why I share it. I think there is
definitely a "learning curve" your body goes through in changing
eating habits. But like others have said, having an "empty tank"
for glycogen makes the postprandial curve a lot less, and I think
that is more important than the fasting number.
I should also add that way back when I wasn't working on my
diet at all, my FBS would go way up when I skipped a meal.
I'd get the shakes and headaches and all that, which I attributed
to "low blood sugar", as most people do. That's why I bought
a glucometer: to see how low it really was! But to my surprise,
when I was shaky, by BS was high (about 120). Someone told
me that it was probably high cortisol ... when your body thinks
it is starving, it pumps out cortisol, a stress hormone, which
dumps glucose into your blood.
THAT kind of high glucose has nothing to do with your body's
ability to STORE glucose, which is what Type 2 diabetes is all
about. If they had tested me back then, they would have
concluded that I had diabetes ... even though my postprandial
glucose curve was pretty flat.
