Eating anything acidic can be harsh on your teeth, esp.
if you tooth enamel is thin. It's mainly an issue if
you eat stuff that sticks to your teeth though. Acid
with meals for some reason helps with blood sugar
control and might slow stomach emptying (so food
gets digested better), so I don't think it's a good
thing to avoid vinegar or lemon juice or kraut, in general.

As for "acidifying" your system: that refers to the
mineral part of the food, not the H+ part that makes
it acidic. Your stomach is LOADED with H+, hydrogen
ions that lower the PH (by the definition of PH). Your
stomach acid is way, way stronger than a lousy Tbls
of vinegar! But the "ash" of vinegar is, I believe, actually
alkaline, as are most fruit/vegie products.

It's really confusing unless you are into chemistry.
I think what it mainly boils down to is: you need to get
plenty of calcium, magnesium, zinc. This is especially
true when you eat proteins ... most meat-eaters also
eat or gnaw bones, so calcium isn't a problem for them.

Also you need to get plenty of Vit D: if Vit D is low,
you will handle calcium incorrectly and might get
osteoporosis even though you have plenty of calcium
in your diet. This is a big problem for people with
gluten-induced gut damage, who are typically very
low in Vit D and have weak bones and cavity-prone
teeth.
