Getting tested after you have been wheat-free doesn't work, but don't
assume you don't have celiac, or the closely related "gluten
intolerance". MOST celiacs don't get really sick from eating wheat,
which is the problem (if they all got really sick, it would be a lot
better diagnosed). 70% get no symptoms at all.

But ... in people who are genetically susceptible, it triggers "leaky
gut" ... gliadin causes the gut to secrete zonulin which opens the
barriers in the gut, and that leads to rogue proteins getting into the
blood. Which trigger stuff like arthritis, and also damage the liver
and pancreas. Which can lead to insulin problems. Some people believe
corn and soy can have similar effects, and for some people dairy.
Anyway, it's good to keep in mind because it *does* seem to wreck
havoc with the whole blood sugar/weight control cycle.

Here is one study on it. I find it pretty fascinating. Our diet these
days is super high in iron, and some people are thinking that is
causing some of the diabetes and metabolic syndrome.

Anyway, it looks like if that IS the issue, donating blood a few times
a year can cure it.
